Ingredients
- 1 cup black beans
- 1 very large sweet potato
- 3 small garlic minced
- quarter of zucchini chopped
- 2 small red peppers
- 1 tsp paprika
- salt
- cayenne pepper
- 1/4 cup fresh basil chopped
- 1/4 cup red sweet pepper
- 1/4 shallot / scallion
- half onion chopped
- Cut sweet potatoes in quarters.
- Roast skin side up for 40 mins.
- Sautéed onions and garlic with table spoon olive oil.
- Blend black beans in nutribullet.
- Combine all other ingredients.
- Cut sweet potato in chunks. Combine.
- Pan fry in olive oil.
