Paige's Recipes Notes: Sub. gluten free flour (Bobs Red Mill). Add more sweetener. Add coconut, pineapple, walnuts, carrots.
Ingredients
1 cup quick cooking oats
1 cup buttermilk
1 egg
1/2 cup brown sugar, packed
1/2 cup melted butter or vegetable oil
1 cup sifted flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 to 3/4 cup raisins, craisins or currants
Instructions
Preheat oven to 400°F degrees.
Note: If buttermilk is not on hand, 1/2 cup milk and 1/2 cup sour cream or yogurt may be substituted. Try different flavors of yogurt for new flavor variations!
Pour the buttermilk (or other liquid) over oatmeal and allow to soak while mixing the dry ingredients. Add egg and sugar to the oatmeal mixture and combine well.
Note: If desired, soak raisins, craisins or currants in 2 tablespoons rum 15 minutes before mixing into batter to plump, refresh and add extra flavor. They can also be heated in water in the microwave for 30 seconds or so for a similar effect.
In a medium bowl, combine the dry ingredients and mix together well. Pour in the melted butter or vegetable oil; stir. Add raisins, craisins, currants (or a mixture of these). Combine all ingredients and stir together just until mixed.
Bake for 15-20 minutes. Makes 12-14 medium or 6 Texas style muffins.
Shortening or healthier substitute (I want to try coconut oil)
Instructions
Warm small bowl full of water on the stove (cereal size bowl). Not too hot, will kill the yeast. "About the temperature you would feed to a baby," or lukewarm.
Pour water back into small bowl and add package of yeast and 1 tsp sugar. Let rise about 15-20 mins.
Pour half the package of white flour and half the package of wheat flour into a large bowl.
Pour half package (4 lb) of sugar - put way less if you don't want sweet bread.
Put one "heaped up" spoonful of shortening (spaghetti size big spoon).
Pour yeast into the dough.
Add 3/4 can full of cream (13.3 oz - large - can).
Add 1 1/2 tbsp sea salt (mixed with 2 small cereal bowls full of water - to dissolve the sea salt).
Flour your hands.
Start kneading - keep adding flour so dough doesn't become sticky.
Knead and knead for about 15 mins.
Separate dough into round pieces about the size of pizza dough, 4x8 inches.
Knead the small pieces - keep adding flour.
Grease loaf pans.
Knead dough into sausage shapes, making sure the edges are smooth.
Place in loaf pans - let rise 2 1/2 hours, until dough is almost the height of loaf pan.
