Cucumber-Avocado Fig Vinaigrette (Doreen Meet-Up)

Cucumber-Avocado Fig Vinaigrette

Paige's Recipe Notes: Made for raw meet-up. All organic, no oil. Refreshing (not as flavorful, but nice and light).

Ingredients
  • 1/2 cup diced cucumber, peeled (about 1/2 of a medium cucumber or 3 oz.)
  • 1/4 of an avocado (1 oz.)
  • 1/4 cup water
  • 1-1/2 tablespoons apple cider vinegar
  • 1 tablespoon chopped parsley 
  • 1 tablespoon yellow onion or shallot
  • 1 teaspoon ground mustard seed
  • 1/8 teaspoon black pepper
  • 2 dried organic Calimyrna figs
Instructions
  1. Using a high-speed or standard blender, blend until smooth (or to your desired consistency).
  2. Makes about 1 cup.

  • 1/8 teaspoon black pepper
Instructions
  1. Using a high-speed or standard blender, blend until smooth (or to your desired consistency).
  2. Makes about 1 cup.
