White Cheese and Chicken Lasagna (Tasty Kitchen)

Deborah
White Cheese and Chicken Lasagna

Source: Tasty Kitchen.

Paige's Recipe Notes: Skip the mozzarella cheese and just put sauce. Or sub cauliflower mash for the mozzarella. Zucchini would be good in this too.

Ingredients
  • 9 whole Lasagna Noodles (not Oven-ready)
  • ½ cups Butter
  • 1 whole Onion, Chopped
  • 1 clove Garlic, Minced
  • ½ cups All-purpose Flour
  • 1 teaspoon Salt
  • 2 cups Chicken Broth
  • 1-½ cup Milk
  • 4 cups Shredded Mozzarella Cheese, Divided
  • 1 cup Grated Parmesan Cheese, Divided, Plus Additional 1/4 Cup For Topping (optional)
  • 1 teaspoon Each, Dried Basil And Oregano
  • ½ teaspoons Ground Pepper
  • 2 cups Ricotta Cheese
  • 2 cups Cooked, Cubed Chicken
  • 1 package (10 Oz. Size) Frozen Chopped Spinach, Thawed And Drained
  • 1 Tablespoon Chopped Fresh Parsley
Instructions
  1. Preheat oven to 350ºF. Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8-10 minutes. Drain and rinse with cold water.
  2. Meanwhile, melt the butter in a large saucepan over medium heat. Cook the onion and garlic in the butter until tender, stirring frequently. Stir in flour and salt; simmer until bubbly.
  3. Mix in the broth and milk, and boil, stirring constantly, for 1 minute. Stir in 2 cups of mozzarella cheese and 1/2 cup Parmesan. Season with basil, oregano and ground black pepper. Remove from heat and set aside.
  4. Spread 1/3 of the sauce mixture on the bottom of the 9×13 inch baking dish. Layer with 1/3 of the noodles, and all of the ricotta and the chicken. Arrange 1/3 of the noodles over the chicken and layer with 1/4 of the sauce mixture, the spinach, and the remaining 2 cups of mozzarella cheese and 1/2 cup Parmesan cheese.
  5. Arrange remaining noodles over cheese and spread remaining sauce evenly over noodles. Sprinkle with parsley and additional 1/4 cup Parmesan cheese (optional).
  6. Bake for 35 to 40 minutes in the preheated oven. Let stand 5 minutes before cutting and serving.

Chilean Chicken Stew (Food & Wine)

Unknown
Chilean Chicken Stew

Source: Food & Wine.

INGREDIENTS

2 tablespoons extra-virgin olive oil
8 carrots, cut into 1/2-inch pieces
6 celery ribs, cut into 1/2-inch pieces
2 large white onions, 1 coarsely chopped and 1 minced
20 medium garlic cloves, minced
1 tablespoon cumin seeds
1 tablespoon dried oregano
Salt and freshly ground pepper
8 large chicken legs (about 3 pounds), skin removed
8 chicken breast halves (about 3 pounds) on the bone, wings and skin removed
1 large butternut squash, peeled, halved lengthwise, seeded and cut crosswise into 1-inch slices
16 small fingerling potatoes
2 cups wild rice (about 3/4 pound)
4 quarts chicken stock or canned low-sodium broth
1/2 cup finely chopped cilantro

INSTRUCTIONS

Heat the oil in a large pot. Add the carrots, celery and coarsely chopped onion and cook over moderate heat, stirring often, until the vegetables are softened but not browned, about 10 minutes. Add the garlic, cumin and oregano and cook, stirring, until fragrant, about 4 minutes.

Spoon half the vegetables into another large pot. Divide the chicken legs and breasts, the squash, potatoes and wild rice between the pots and pour 2 quarts of the stock into each pot. Season well with salt and pepper. Add enough water to just cover the chicken and vegetables and bring to a boil. Simmer over moderately low heat until the vegetables and rice are tender and the chicken is cooked through, about 1 1/4 hours. Season with salt and pepper.

In a small strainer, rinse the minced onion. Transfer the onion to a kitchen towel and squeeze dry. In a small bowl, combine the onion with the cilantro.

Ladle the chicken stew into deep bowls. Sprinkle with the onion-cilantro mixture and serve.

MAKE AHEAD
The stew can be refrigerated for up to 2 days. Prepare the cilantro garnish just before serving.

One Serving Calories 683 kcal, Total Fat 13.6 gm, Saturated Fat 3.7 gm

Unknown
Fuji Apple Chicken Salad

Source: Gimme Some Oven.

Total time: 40 MINS
Prep time: 10 MINS
Cook time: 30 MINS

Ingredients
Salad
  • 1 Tbsp. olive oil
  • 2 boneless, skinless chicken breasts
  • 1 (10 oz.) bag mixed greens
  • quarter of a red onion, sliced thinly
  • 2 cups apple chips
  • 1 cup glazed pecans
  • 1/2 cup gorgonzola cheese, crumbled
  • 1 cup freshly-diced tomatoes (optional)
White Balsamic Vinaigrette
  • 1/4 cup white balsamic vinegar (or regular balsamic vinegar)
  • 1 Tbsp. minced garlic
  • 1/2 tsp. salt
  • 1/2 tsp. freshly-ground black pepper
  • 3/4 cup olive oil
Instructions
Salad
  1. Preheat oven to 350 degrees F. Prepare a baking sheet with aluminum foil, then mist it with cooking spray or oil.
  2. Brush chicken breasts with olive oil, then season with a pinch of salt and freshly ground black pepper. (Or you can add your favorite seasonings.) Place on prepared baking sheet, and cook for 20-30 minutes, or until internal temperature is 160 degrees and the juices run clear. Remove and let chicken cool for at least 10 minutes, then slice or shred.
  3. Toss the remaining five ingredients together, then add your desired amount of vinaigrette. Toss and serve immediately.
  4. ***All ingredient amounts are approximate. I usually just toss in a little of this, a little of that.***
Vinaigrette
  1. Whisk all ingredients together until blended.
Ali’s Tip: You can take the time to prepare each of these ingredients “homemade”…..or take a few shortcuts. When pressed for time, I’ll often substitute in rotisserie chicken meat, storebought glazed pecans and apple chips.

Makes: 8 to 12 servings.

Preparation Time: 15 Minutes
Cooking Time: 20 Minutes

Treasure Tip: Make your own herb vinegar by adding your favorite fresh herbs to the vinegar bottle and letting them sit two weeks, swirling the bottle occasionally. Add herbs to butter and use on vegetables, fish or meats. To make herb oil, add dried (never fresh) herbs to the bottle; let it sit two weeks. Strain the oil; add more herbs; let it sit two more weeks.

Cumin Rice Timbales

  • 1/4 teaspoon salt
  • 1 tablespoon fresh parsley, minced

Rosemary Garlic Chicken

Ingredients
  • 1 (4-pound) roasting chicken
  • 2 large, or 4 small, lemons
  • 1 head garlic cloves
  • Fresh rosemary sprigs
  • Olive oil
  • 2 pounds small red potatoes (optional)
Instructions
  1. Preheat oven to 425F. Wash chicken under cold water, pat dry, inside and out, with paper towels. Cut lemons in quarters. Separate garlic into cloves. Rub chicken with olive oil; place in roasting pan; roast 30 minutes. Reduce heat to 375 F; place potatoes around chicken, if desired. Makes: 4 servings.

Preparation Time: 10 Minutes
Cooking Time: 1 Hour 15 Minutes

Treasure Tip: Poached chicken makes an excellent base for chicken salads and casseroles. For a moist, succulent poached chicken, keep your poaching liquid (water or chicken stock) at a gentle simmer. Remove chicken when breast is firm and drumsticks barely move.

Okra Soup

Here's Mary Whitcher's Okra Soup, which dates from the last decade of the 18th century and is still good today. It's taken from the "Shaker Cookbook."

OKRA SOUP

Ingredients
  • 4 pounds veal shank, cracked
  • 2 large onions, diced
  • 2 carrots, diced
  • 4 tomatoes, skinned and cut

Instructions
  1. Place the veal shank in an enamel, glass or stainless steel soup pot with the onions, carrots and tomatoes. Add the water and seasonings. Simmer the mixture over low heat for 6 hours. According to Mary Whitcher: "This soup is a meal in itself and should not be served with a dinner, but as a supper (or luncheon) dish along with some greens and a hearty dessert.

"Engagement" Chicken (Glamour)

Unknown
"Engagement" Chicken

Source: Glamour.

Serves: 2 to 4

Ingredients
  • 1 whole chicken (approximately 4 pounds)
  • 1/2 cup fresh lemon juice, plus 3 whole lemons—including 1 sliced for garnish
  • 1 tablespoon kosher or coarse sea salt
  • 1/2 teaspoon freshly ground pepper
  • Fresh herbs for garnish (4 rosemary sprigs, 4 sage sprigs, 8 thyme sprigs, and 1 bunch flat-leaf parsley)
Instructions
  1. Position an oven rack in the upper third of the oven and preheat the oven to 400°F. Remove the giblets from the chicken, wash the chicken inside and out with cold water, then let the chicken drain, cavity down, in a colander for 2 minutes.
  2. Pat the chicken dry with paper towels. Place the chicken breast-side down in a medium roasting pan fitted with a rack and pour the lemon juice all over the chicken, both inside and out. Season the chicken all over with salt and pepper inside and out.
  3. Prick 2 whole lemons three times each in three different places with a fork and place them deep inside the cavity. Chicken cavity size may vary, so if one lemon is partly sticking out, that’s fine. (Tip: If the lemons are stiff, roll them on the countertop with your palm before pricking to get the juices flowing.)
  4. Put the chicken in the oven, lower the oven temperature to 350°F, and roast, uncovered, for 15 minutes.
  5. Remove the roasting pan from the oven. Using tongs or two wooden spoons, turn the chicken breast- side up. Insert a meat thermometer in the thigh, and return the chicken to the oven and roast for about 1 hour to 1 hour and 15 minutes or until the meat thermometer reads 180°F and the juices run clear when the thigh is pricked with a fork. Continue roasting if necessary. Keep in mind that cooking times in different ovens vary; roasting a chicken at 350°F takes approximately 18-20 minutes per pound, plus an additional 15 minutes.
  6. Let the chicken rest for 10 minutes before carving. And here’s the secret: Pour the juices from the roasting pan on top of the sliced chicken— this is the “marry me juice.” Garnish with fresh herbs and lemon slices.
