Seared Grouper (Cooking Class Piquant)

Seared Grouper (Fish)

Ingredients
  • 4 filets grouper or similar white fish, rinsed and pat dried
  • kosher salt and fresh ground pepper
  • milk (as needed)
  • 2 tbsp of extra virgin olive oil
Instructions
  1. Soak filets in milk for 15-20 mins.
  2. Rinse and pat dry in paper towels.
  3. Season with salt and pepper.
  4. Pre-heat a non-stick pan in medium high heat; add olive oil as needed.
  5. Once oil starts smoking, add fish and sear for 6 mins.
  6. Flip side; lower heat and sear other side for 6 mins.
  7. Serve immediately.
