Ingredients
- 4 filets grouper or similar white fish, rinsed and pat dried
- kosher salt and fresh ground pepper
- milk (as needed)
- 2 tbsp of extra virgin olive oil
- Soak filets in milk for 15-20 mins.
- Rinse and pat dry in paper towels.
- Season with salt and pepper.
- Pre-heat a non-stick pan in medium high heat; add olive oil as needed.
- Once oil starts smoking, add fish and sear for 6 mins.
- Flip side; lower heat and sear other side for 6 mins.
- Serve immediately.
