Scrambled Veggies & Eggs (Dr. Fuhrman)

Preparation Time: 15 minutes

Ingredients
  • 2 eggs
  • 2 tablespoons unsweetened soy, hemp or almond milk
  • 1/2 medium bell pepper, diced
  • 2 green onions, chopped
  • 1/2 cup diced fresh tomatoes
  • 1 cup diced fresh mushrooms
  • 1 tablespoon Dr. Fuhrman’s MatoZest or other no-salt seasoning blend, adjusted to taste
  • 1 teaspoon Spike or other no-salt seasoning
  • 4 ounces spinach, coarsely chopped or baby spinach
Instructions
  1. Beat eggs with soy milk.
  2. Heat 1/8 cup water in a sauté pan and add the peppers, onions, tomatoes, mushrooms, VegiZest, and Spike. Sauté until vegetables are tender and most of the water is cooked out. Add spinach to wilt.
  3. Add eggs and scramble until cooked through.
