Ingredients
- 2 eggs
- 2 tablespoons unsweetened soy, hemp or almond milk
- 1/2 medium bell pepper, diced
- 2 green onions, chopped
- 1/2 cup diced fresh tomatoes
- 1 cup diced fresh mushrooms
- 1 tablespoon Dr. Fuhrman’s MatoZest or other no-salt seasoning blend, adjusted to taste
- 1 teaspoon Spike or other no-salt seasoning
- 4 ounces spinach, coarsely chopped or baby spinach
- Beat eggs with soy milk.
- Heat 1/8 cup water in a sauté pan and add the peppers, onions, tomatoes, mushrooms, VegiZest, and Spike. Sauté until vegetables are tender and most of the water is cooked out. Add spinach to wilt.
- Add eggs and scramble until cooked through.
