Brown Rice Pancakes

Brown Rice Pancakes (from John)

IN BIG BOWL

Ingredients
  • 5 cups brown rice flour (best one I found is in bulk bin at Greenwise or Whole Foods)
  • 1 cup potato starch
  • 5 oz tapioca flour
  • 3 oz evaporated cane juice (looks just like Florida crystals organic sugar)
  • 20 teaspoons of Rumford aluminum-free baking powder
  • 1 teaspoon of sea salt
  • 3 teaspoons of xanthan gum
Instructions
  1. Sift ingredients together. (I just stir together in big bowl put in ziplock bag and shake it up.)
  2. Store in air tight container.
  3. To make pancakes, just add some of the mix to 2 eggs or egg substitutes and rice milk to get the consistency you like for your pancakes.
  4. I put 2 eggs in a 2 cup measuring cup, beat them up and add a teaspoon of olive oil. Then I add 4-5 tablespoons of the pancake mix and some rice milk to about the 10 oz line. Stir it up and add more mix or rice milk to get the consistency you like for your pancakes. I like it thick so my pancakes are big and fluffy!
