Ingredients
- 2 large chicken breasts, cut in quarters
- dijon mustard
- olive oil
- maple syrup
- rosemary
- garlic, minced
- mustard seeds
- organic low sodium chicken or vegetable broth
- Mix 4 tablespoons of Dijon with olive oil and a tablespoon of maple syrup and a few mustard seeds.
- Rub quarter of mixture over chicken and add garlic.
- Sprinkle with rosemary
- Heat a tablespoon of olive oil in pan... Make sure it is really hot. Place chicken breasts in pan to brown (about 4 mins each side). Cover pan when browning.
- Transfer to casserole dish and top with rest of mixture. Cover and bake for 20 mins.
