Butternut squash, roasted with smoked paprika, garlic, onion powder, and a touch of apple cider vinegar and sea salt
Ingredients
- 1 medium sized butternut squash, unpeeled, seeded, and cubed
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon nutritional yeast, optional
- 1/2 teaspoon salt
- 2 tablespoons olive oil
- 2 tablespoons apple cider vinegar
Ingredients
- Preheat the oven to 425 degrees F. Toss all the ingredients together in a bowl. Once all the squash pieces are coated, transfer them to a parchment-lined baking sheet and space them out so they're not on top of each other.
- Bake in an oven for 25 minutes, turning them once during that time.
- Serve on top of a big green raw salad for those days when you want something warm and comforting, but still healthy
