Pumpkin Spice Chia Seed Muffins

Ingredients
  • 2 Tbsp ground chia seeds (or ground flax seeds)
  • 1 cup whole wheat flour
  • 1/2 cup white unbleached flour
  • 1/4 cup extra virgin olive oil
  • 1 cup pure maple syrup
  • 2 tsp baking soda
  • 1 can (16 oz) pumpkin 
  • 1 Tbsp vanilla
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 2 tsp cinnamon
  • 2 eggs
Instructions
  1. Preheat oven to 350 degrees.
  2. Mix dry ingredients together in a bowl. In a separate bowl, then mix all wet ingredients.
  3. Fold the wet ingredients into the dry ingredients and spoon into paper-lined muffin or greased muffin tins. 
  4. Bake for 25-30 minutes or until a toothpick inserted into the middle of a muffin comes out clean.
