Ingredients
- 2 cups garbanzo beans
- 1/4 cup extra virgin olive oil
- 1/4 cup brown rice vinegar
- 1/4 cup red onion, minced
- 1 glove garlic
- 3/4 cup celery sliced with leaves
- 1/4 cup red bell pepper finely chopped
- 1 tbsp. fresh basil, chopped or 1/2 tsp dried
- 2 tsp fresh oregano, chopped or 1/4 tsp dried
- Place all ingredients in a mixing bowl and toss well.
- Refrigerate and marinate overnight for 8 hours.
