Greek Garbanzo Bean Salad

Greek Garbanzo Bean Salad 

Ingredients
  • 2 cups garbanzo beans
  • 1/4 cup extra virgin olive oil
  • 1/4 cup brown rice vinegar
  • 1/4 cup red onion, minced
  • 1 glove garlic
  • 3/4 cup celery sliced with leaves
  • 1/4 cup red bell pepper finely chopped
  • 1 tbsp. fresh basil, chopped or 1/2 tsp dried
  • 2 tsp fresh oregano, chopped or 1/4 tsp dried
Instructions
  1. Place all ingredients in a mixing bowl and toss well. 
  2. Refrigerate and marinate overnight for 8 hours.
