Paige's Dijon Chicken

Paige's Dijon Chicken

Ingredients
  • 2 large chicken breasts, cut in quarters
  • dijon mustard 
  • olive oil 
  • maple syrup
  • rosemary 
  • garlic, minced
  • mustard seeds
  • organic low sodium chicken or vegetable broth 
Instructions
  1. Mix 4 tablespoons of Dijon with olive oil and a tablespoon of maple syrup and a few mustard seeds.
  2. Rub quarter of mixture over chicken and add garlic.
  3. Sprinkle with rosemary 
  4. Heat a tablespoon of olive oil in pan... Make sure it is really hot. Place chicken breasts in pan to brown (about 4 mins each side). Cover pan when browning. 
  5. Transfer to casserole dish and top with rest of mixture. Cover and bake for 20 mins.
