RAW Grated Beet & Carrot Salad

Try this: grated beet & carrot salad. It is tasty and packed full of anti-bloating nutrients - potassium from beets, gingerols from ginger & carotenoids from carrots.

Serves: 1

Ingredients
  • 1/4 cup raw beets, peeled and grated
  • 1/4 cup organic carrots
  • 14 tsp fresh ginger, minced
  • 1 tbsp apple juice
  • 1/2 tbsp extra-virgin olive oil 
  • sea salt to taste
Instructions
  1. Combine the grated veggies in a small bowl. Mix the rest of the ingredients in a separate bowl and drizzle over salad mixture. Toss gently.
