Banana Fritters

Banana Pancakes (Fritters)

Paige's Recipe Note: Really good but a bit oily.

Ingredients
  • 3 ripe bananas 
  • 1 egg 
  • 1 teaspoon vanilla 
  • ½ teaspoon cinnamon 
  • ¼ teaspoon nutmeg 
  • ½ cup sugar
  • 2 cup flour
  • 1 tablespoon baking powder 
  • ½ cup skim milk 
Instructions
  1. Mash bananas and mix well with egg sugar, vanilla, cinnamon and nutmeg.
  2. Sift flour and baking powder into the mixture and mix well with spoon. 
  3. Add the milk and mix well. 
  4. Spoon batter into oil.
To make less – 2 bananas, 1 egg, ½ teaspoon vanilla, ¼ teaspoon cinnamon, 1/8 tsp nutmeg , ¼ sugar, 1 cup flour (half whole wheat) ½ tablespoon baking powder, ¼ cup skim milk
